Incidentally, rooibos tea has been used to make tea in South Africa for at least 300 years. As rooibos tea does not come from the camellia sinensis tea plant, it is not a real tea in the classic sense, but a herbal tea. In fact, the plant is actually a legume. It can grow up to two meters tall and has rod-like branches with small, thin twigs and fine, needle-like leaves. The leaves are harvested to make tea. During processing, the leaves are crushed, bruised, moistened, oxidized and sun-dried. Green rooibos is now also popular. Just like real green tea, green rooibos is also unoxidized. As South Africa's national drink, the tea is ubiquitous.
